February 2008 - Strawberry Mille Feuille
Part 3 of our Valentines recipe.
puff pastry, cream and strawberries| Ingredients Serves 3-6

step 1. Preheat oven Gas Mark 6 (200C/400F) step 2. Roll out pastry to a thin rectangle and cut into 3 even-sized, smaller rectangles. step 3. Transfer to a greased baking sheet , and bake in oven for approx 15 minutes or until golden brown. step 4. Remove from oven and place on a wire rack to cool. (Select the neatest rectangle for the top layer). step 5. Slice down the vanilla pod and remove seeds with a sharp knife and put to one side. step 6. Whisk the cream until stiff and stir in the caster sugar, half the strawberries and vanilla pod seeds. step 7. Spread half the cream and strawberry mixture on one of the pastry slices and lay another pastry slice on top and repeat procedure. step 8. Put jam and water into a saucepan and gently heat until jam becomes a liquid step 9. Brush the top pastry slice with the liquid jam and arrange the remaining strawberries on top. Brush again with the hot jam and drizzle over pastry and serve. |
Tips...Dust surface and rolling pin with flour to stop pastry sticking. Make sure the pastry is thin (2-3mm thickness) Brush pastry with a beaten egg before cooking to give it a glazed look. Dust over with caster sugar before serving. | |
