Italian Coffee and Chocolate Mousse

Italian Coffee and Chocolate Mousse

Ingredients
  • 100g italian dark chocolate
  • 50g unsalted butter, diced
  • 2 tsp granulated italian coffee
  • 3 tsp hot water
  • 2 large free range eggs (separate the whites from the yolks)
  • 1 large free range egg white
  • 1 tbsp caster sugar
  • 50ml whipping cream or double cream

step 1. Break up the chocolate and put in a heat proof bowl on top of a pan of gently simmering water. Add the butter and melt gently then leave to cool for a minute.
step 2. Whilst the chocolate is cooling. Dissolve the coffee in the hot water, cool slightly and then stir into the chocolate. Stir in the 2 egg yolks.
step 3. In a clean mixing bowl, whisk the 3 egg whites until they form soft peaks and whisk in the caster sugar.
step 4. Stir in about a quarter of the egg whites into the chocolate mixture to soften it, then fold the mixture back into the remaining egg whites.
step 5. Whip the cream to soft peaks and fold half into mixture.
step 6. Spoon the mixture into either coffee cups or liquor glasses.
step 7. Cover with cling film and chill for about 6 hours or more.
step 8. Bring out of fridge 15 - 20 minutes before serving. Serve with the remaining whipped cream on top and decorate.
