February 2008 - Stuffed Mushrooms
I have given you three courses this month as the recipes are easy to prepare, giving you more time to enjoy the meal, especially on Valentines Night.
Part 1 of our Valentines Recipe.
This starter has made an appearance on our 'Specials Board' and has even wowed one of the local companies who came to try us.

Stuffed Mushroom on a Bed of Rocket Salad with an Oil and Balsamic Dressing
| Ingredients Serves 2

step 1. Preheat oven Gas Mark 5 (190C/375F) step 2. Chop onions and button mushroons. step 3. Crush garlic cloves . step 4. Put bread slices in blender. Blend until small and grainy. step 5. Lightly fry onions in butter when soft add the crushed garlic, button mushrooms (including stems from the large flat mushrooms) and spinach. step 6. Once cooked remove from heat and mix in the breadcrumbs then leave to cool for 5 minutes. step 7. Grate cheddar cheese and mix into spinach and mushroom mix, season with salt and pepper to taste. step 8. Put flat mushrooms on a baking tray lined with greaseproof paper and bake for 10 minutes. step 9. Remove flat mushrooms from oven and spoon on the spinach and mushroom mix. Cook for a further 10 minutes. step 10. Remove from oven when cooked or until mix is lightly brown and serve on a bed of salad and grated parmesan over mushrooms. |
Tips...For a crisp salad, wash and drain then put in freezer for about 2 minutes. Add chopped fried bacon to the spinach and mushroom mix for a variation, or substitute cheddar cheese with swiss cheese. | |
