March 2008 - Red Onion and Goats Cheese Tartlets with Thyme


I have given quantities for seven, so that you can pinch one straight from the oven without anyone noticing !!

Red Onion and Goats Cheese Tartlets with Thyme

Ingredients
Serves 7 (as starters)
For the pastry:
  • 175g (6 oz) plain flour
  • 75g (3 oz) butter plus extra for greasing
  • 40g (1 1/2oz) grated fresh parmesan cheese
  • 1 tsp english mustard
  • 1 tsp paprika
  • 1 large egg, beaten

For the filling:
  • 1 large red onion finely chopped
  • 110g (8 oz) goats cheese
  • 25g butter (1 oz) butter
  • 1 large egg
  • 120 ml (4 fl oz) single cream
  • 7 small sprigs of fresh thyme, dipped in olive oil
  • 1 tsp english mustard
  • 1 tsp paprika
  • salt and ground black pepper (for seasoning)
step 1. Preheat oven Gas Mark 4 (180C/350F)
step 2. Mix all pastry ingredients into a large bowl until a dough like mixture is made.
step 3. Roll pastry and cut out 7 circles with a 10cm pastry cutter .
step 4. Grease 7 pastry tartlet tins (approx 8cm base by 2cm depth) and line with pastry circles and place on a large tray.
step 5. Lightly fry onions in the butter, when soft add the mustard until all the onions are coated and remove from heat.
step 6. Layer pastry cases with the onion mix.
step 7. Crumble goats cheese into pastry cases (leaving enough room for the liquid).
step 8. Whisk together cream, egg, paprika and a good pinch of salt and pepper.
step 9. Pour mixture into pastry cases.
step 10. Decorate with fresh thyme.
step 11. Cook for approx 25 - 35 minutes or until golden on middle shelf of oven.
step 12. When cooked remove from tartlet tins and cool on wire rack.

Place 2 strips (3cm x 20cm) of silicone baking paper criss-crossed over the tartlet tins before adding your pastry. This wil help lift the tartlets from the tins onced cooked.
